Font sizes – some pages in pt – some small, med, etc

I am using WP 4 something. Last 4. I decided to change a bit of fonts today and use WPEdit. SOME pages show the font in pts, some show the font as small, medium, etc. I porefer the small, etc. How can I make that change globally?

Also some pages show fonts NOT in the drop down list for font choices. How can I edit that list?
