Add an excerpt or a limited word count to a “Plain Paragraph Text” field

I am looking to limit the word count for a “Plain Paragraph Text” field. I need to be able to have the full word count in different places on the site. On a different page I am looking to cut down on the word count to all the grid to be of similar sizes. Thank you to anyone who might have a solution.
