This is what the Advanced Custom Fields plugin should have been for the Gutenberg era. Creates custom field blocks (using the block interface!) that you can use and reuse. Set up predefined templates, set up conditional logic for fields, and even add the custom field data to the page/post_type meta, which makes it usable in templates and other situations.
This plugin completely removes the hassle and complexity of creating custom blocks and puts the content management back into the content management system. A MUST HAVE for any new WordPress build.
