How to select a template for posts and test the appearance in an email?

Hi. I am trying your plugin because my old subscription plugin (Subscribe2HTML) has started having problems. Your plugin looks simple and interesting, but I have not been able to figure out the following:

1. I create a new post template. But now what? Where do I set that as the template to use for new posts?

2. How might I test the template? Is there a way to see what the most recent blog post, for example, looks like when sent with this template?
